Coconut butter granola= AMAZING!
Coconut butter is simply shredded coconut that is put through a food processor until it turns into a liquid (this when melted and then left cool acts like chocolate, you can make like coconut chips! Or coconut butter covered frozen fruit!) This granola:
- 1/2 cup shredded coconut (I use sweetened)
- 1 banana
- 1 teaspoon vanilla
Combine all ingredients in a food processor and let run until running and gooey.
In a bowl combine 3 cups oats (not quick) and I use 1 tablespoon Brown Splenda (but you don’t need too)
Mix your coconut banana butter mix into the oats and make sure you to coat them as best as you can.
Place on a baking sheet in the oven for 15 min @325 stir and put back in 5-10 min longer stirring the oats around occasionally so they don’t burn.
You can add whatever you want! Nuts, dried fruits, seeds, chocolate chips (after the oven part)
So yummy! And cheap!
With 1/2 cup servings you get 6 @220 calories each. #funeralformyfat #vegan

I honestly can’t put into words just how much I’ve grown over the past four years at UMD, all the wonderful experiences I’ve had, and the greatest friends I’ve made. It still hasn’t really hit me that I’m leaving tomorrow for good but I know everything I’ve learned here, both academic and not, the good times and bad, will be carried with me for the rest of my life. Although the future is filled with a lot of uncertainties, I’m confident that it will be bright.
